This Cajun shrimp pasta is a milder version of my popular spicy Cajun shrimp pasta recipe.
First, cook your fettuccine. Save some pasta water. Then drain and set aside.
While the pasta cooks, preheat some olive oil in a pan over medium-high heat. Then pan-fry the shrimp for 2-3 minutes.
Now add in diced red onion and minced garlic. Sauté for 2 minutes. Then add some halved cherry tomatoes.
Pour tomato passata into the pan. Then season with paprika powder, red chili flakes, salt, and pepper. Add parsley and baby spinach. Then add in some pasta water.
Now combine the pasta and the sauce. Garnish with grated parmesan cheese and enjoy!
