This coconut chickpea curry is super simple, healthy, and delicious!

First, sauté onion, garlic, and ginger in a pot over medium heat.

Next, add red bell pepper, mushrooms, red curry paste, curry powder, ground turmeric, ground cumin, salt, and pepper.

Now add chickpeas and coconut milk. Stir everything, cover the pot and let the curry simmer until the vegetables are tender.
