This curry fried rice is incredibly flavorful and super easy to make!

First, sauté some onion, garlic, carrot, and red bell pepper in a large pan over medium-high heat.

Next, add your cooked rice, green peas, curry powder, soy sauce, ketchup, red chili flakes, and toss. Season with black pepper, add green onions, and toss again.

Now add some eggs and scramble them. Then toss until everything is combined.
