Japanese beef curry is incredibly flavorful and delicious!

First, sear the beef until browned. Then remove and sauté the onions until browned around the edges.

Add back the beef. Then add water and simmer for 1.5 hours.

Add the chopped potatoes, eggplant, carrots, garlic, and ginger. Simmer for 20 minutes.

Next, add the curry roux cubes and stir to dissolve. Add soy sauce, chuno sauce, and ketchup. Add more water as needed and cocoa powder.

Serve over white rice and enjoy!
