These Korean-style spicy noodles are super delicious and easy to make!

First, combine gochugaru, gochujang, mirin, soy sauce, honey, sesame oil, and black pepper in a small bowl.

Next, sauté some garlic and onion in a pan over medium-high heat for 1-2 minutes. Add carrots, bok choy stems, mushrooms, and cabbage. Sauté for 2-3 minutes.

Add udon noodles, the sauce, green onions, and bok choy leaves. Toss until combined.

Garnish with sesame seeds and enoy!
