This penne alla vodka with chicken is super creamy and delicious!
First, season your chicken breasts and bake them for 20 minutes at 425 degrees.
Next, prepare your cashew Alfredo sauce by blending cashews, lemon juice, black pepper, salt, nutritional yeast, and almond milk/water.
Now cook the penne according to package instructions.
Next, sauté garlic and red onion in a large pan over medium heat.
Add the vodka, tomato passata, Alfredo sauce, and pasta water. Season with red pepper flakes, salt, and pepper.
When the chicken breasts are cooked through, cut them into bite-sized pieces.
Lastly, transfer the pasta and chicken to the pan. Toss until everything is combined.
