This vegetarian pesto gnocchi is super simple to make and tastes delicious!

First, roast some pine nuts in a pan. Then add them alongside all other basil pesto ingredients to a food processor and blend.

Now sauté the cherry tomatoes and mushrooms for the pesto gnocchi.

Add yellow bell peppers and zucchini. Then sauté until tender.

Now transfer the cooked potato gnocchi, basil pesto, and pasta water to the pan and toss. Stir in some lemon juice and baby spinach.

Now add some feta cheese.
