This soba noodle salad is super simple, healthy, and delicious!

Cook the soba noodles in a pot for 3-5 minutes. Then drain and rinse with cold water.

While the soba noodles cook, prepare the salad dressing by mixing soy sauce, sesame oil, honey, sriracha, grated ginger, and lime juice.

Now combine the soba noodles, cucumbers, carrots, cabbage, green onions, and dressing. Toss thoroughly.
