This split pea soup is super healthy and delicious!
First, sauté some onion, garlic, and celery in a pot over medium heat.
Next, add the split peas, vegetable broth, dried thyme, salt, pepper, and bay leaf. Simmer for 60 minutes.
Now add the potatoes and carrots and let the soup simmer for 20 more minutes.
Serve with your favorite bread and enjoy!
