This veggie tofu stir fry is super easy and delicious!

First, mix soy sauce, water, honey, and sriracha in a small bowl. Then set the sauce aside.

Next, fry the tofu in a pan until it has some color. Then add one tablespoon of the sauce, quickly toss and remove the tofu from the pan.

Now sauté carrots, mushrooms, garlic, and ginger in the pan until the carrots are tender.

Add the sauce and some cornstarch slurry to the pan. Let the sauce simmer until it thickens.

Now add baby spinach and the tofu to the stir fry.

Serve over rice with green onion and sesame seeds.
