This white bean chicken chili is super simple, healthy, and packed with flavor!

First, sauté some onion, garlic, and diced chiles in a pot over medium heat.

Next, add chili powder, curry powder, ground cumin, dried oregano, and ground coriander. Toast the spices for 1 min.

Now add chicken broth, salt, pepper, and chicken breasts to the pot. Cover and let everything simmer for 20-30 minutes.

In the meantime, blend some white beans and chicken broth in a food processor until creamy.

When the chicken is cooked through, shred it and add it back to the chili. Add the white beans, corn, and white bean puree to the pot and stir. Simmer for 5-10 minutes.
