Watermelon Feta Salad
- 1.6 lb watermelon cut into cubes
- ¾ cup feta cut into small cubes
- ⅓ cup basil chopped
- balsamic glaze

- ¼ cup balsamic vinegar
- 2 teaspoon maple syrup

If you want to prepare your own balsamic glaze, simply add the balsamic vinegar and maple syrup to a pot.
Heat the pot using high heat and bring the balsamic reduction to a boil. Then reduce the heat a bit and let the balsamic reduction simmer for approx. 10 minutes until it is reduced by half.
Let the balsamic glaze cool down and use it for the salad. Any excess can be stored in the refrigerator.
- I recommend making the balsamic glaze yourself, as most store-bought versions contain unnecessary and unhealthy ingredients. You can also prep it in advance and keep it in the refrigerator for your salad dressings!
- Combine the watermelon and feta shortly before serving. Otherwise, the salad can become very watery.
