Gluten-Free Oatmeal Raisin Cookies

These gluten-free oatmeal raisin cookies are a delicious combination of oats, cinnamon, raisins, and cashew butter. They are sweet, soft, and super delicious!

Ingredients

Dry Ingredients

  • 1 ½ cup oats
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • cup brown sugar
  • ½ cup raisins

Wet Ingredients

  • ½ cup cashew butter
  • 2 tablespoons greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350 °F (180 °C).
  • Mix all dry ingredients, except the raisins, in a bowl.
    1 ½ cup oats, ½ teaspoon baking soda, ½ teaspoon cinnamon, ⅓ cup brown sugar
  • Mix all wet ingredients in another bowl.
    ½ cup cashew butter, 2 tablespoons greek yogurt, 2 eggs, 1 teaspoon vanilla extract
  • Add the dry ingredients to the wet ingredients and mix until combined. Then fold in the raisins.
    ½ cup raisins
  • Roll the dough into balls and place them on a baking sheet lined with parchment paper. Gently flatten the dough balls (the dough doesn't spread while baking).
  • Bake the cookies for 10-12 minutes until the edges are golden. Then remove them from the oven, let them cool and enjoy!

Notes

  • Oats: You can use rolled oats or quick oats depending on the texture you prefer. Quick oats give the cookies a finer texture while rolled oats give the cookies a heartier texture.
  • Sugar: You can substitute brown sugar with coconut sugar if you want to. Both work fine!
