These gluten-free oatmeal raisin cookies are a delicious combination of oats, cinnamon, raisins, and cashew butter. They are sweet, soft, and super delicious!

Dry Ingredients
- 1 ½ cup oats
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ⅓ cup brown sugar
- ½ cup raisins
Wet Ingredients
- ½ cup cashew butter
- 2 tablespoons greek yogurt
- 2 eggs
- 1 teaspoon vanilla extract
Preheat your oven to 350 °F (180 °C).
Mix all dry ingredients, except the raisins, in a bowl.

Mix all wet ingredients in another bowl.
½ cup cashew butter, 2 tablespoons greek yogurt, 2 eggs, 1 teaspoon vanilla extract
Add the dry ingredients to the wet ingredients and mix until combined. Then fold in the raisins.

Roll the dough into balls and place them on a baking sheet lined with parchment paper. Gently flatten the dough balls (the dough doesn't spread while baking).
Bake the cookies for 10-12 minutes until the edges are golden. Then remove them from the oven, let them cool and enjoy!
- Oats: You can use rolled oats or quick oats depending on the texture you prefer. Quick oats give the cookies a finer texture while rolled oats give the cookies a heartier texture.
- Sugar: You can substitute brown sugar with coconut sugar if you want to. Both work fine!
