Teriyaki Shrimp Stir Fry

This teriyaki shrimp stir fry is a super quick and delicious dish that comes together in under 30 minutes. It combines fresh vegetables with juicy shrimp and a flavorful teriyaki sauce. Serve it with rice or noodles for an easy weeknight dinner!

Ingredients

  • 1 pound shrimp peeled and deveined
  • 2 garlic cloves minced
  • 2 teaspoons ginger grated or minced
  • 2 cups broccoli florets
  • 1 red bell pepper cut into dices or slices
  • 2 carrots cut into slices
  • 2 tablespoons avocado oil or vegetable oil half for the shrimp, half for the vegetables
  • black pepper to taste
  • sesame seeds, green onion (optional) for garnish

Teriyaki Sauce

  • ¼ cup soy sauce or tamari (gluten-free) or coconut aminos (soy-free)
  • ¼ cup sake
  • ¼ cup mirin
  • 2 tablespoons honey
  • cornstarch slurry as needed

Instructions

  • Preheat the avocado oil in a pan over medium heat.
  • Mix all teriyaki sauce ingredients in a small bowl until they are combined.
  • Then sear the shrimp from both sides for around 6-8 minutes until cooked through. Remove them from the pan and set them aside.
  • Next, add more avocado oil to the pan. Sauté the garlic, ginger, and vegetables until they start to soften.
  • Now add the sauce to the pan. Bring it to a simmer and add the cornstarch while stirring. Continue until the sauce has thickened.
  • Add the shrimp to the pan, season with black pepper, and toss. Garnish (optional), serve and enjoy!

Notes

  • Cornstarch slurry: Mix 2 tablespoon cornstarch with 4 tablespoon water. Only use as much as you need to thicken the stir fry!
