- 1 pound shrimp peeled and deveined
- 2 garlic cloves minced
- 2 teaspoons ginger grated or minced
- 2 cups broccoli florets
- 1 red bell pepper cut into dices or slices
- 2 carrots cut into slices
- 2 tablespoons avocado oil or vegetable oil half for the shrimp, half for the vegetables
- black pepper to taste
- sesame seeds, green onion (optional) for garnish
Teriyaki Sauce
- ¼ cup soy sauce or tamari (gluten-free) or coconut aminos (soy-free)
- ¼ cup sake
- ¼ cup mirin
- 2 tablespoons honey
- cornstarch slurry as needed
Preheat the avocado oil in a pan over medium heat.
Mix all teriyaki sauce ingredients in a small bowl until they are combined.
Then sear the shrimp from both sides for around 6-8 minutes until cooked through. Remove them from the pan and set them aside.
Next, add more avocado oil to the pan. Sauté the garlic, ginger, and vegetables until they start to soften.
Now add the sauce to the pan. Bring it to a simmer and add the cornstarch while stirring. Continue until the sauce has thickened.
Add the shrimp to the pan, season with black pepper, and toss. Garnish (optional), serve and enjoy!
- Cornstarch slurry: Mix 2 tablespoon cornstarch with 4 tablespoon water. Only use as much as you need to thicken the stir fry!
