Cajun Salmon Pasta

Cajun salmon pasta is a tasty dish that combines flaky salmon, a creamy tomato-based sauce, delicious fettuccine, and Cajun seasoning. It's super easy to make and just perfect for dinner!

Ingredients

Salmon Marinade

  • 4 salmon filets
  • 2 tablespoons Cajun seasoning
  • 1 ½ tablespoons extra virgin olive oil

Other Ingredients

  • 1 tablespoon extra virgin olive oil
  • 12 ounces pasta of choice
  • 3 garlic cloves minced
  • 1 yellow onion finely diced
  • 1 red bell pepper sliced
  • 6 mushrooms sliced
  • 1 small zucchini halved and sliced
  • cup white wine
  • 1 ¼ cup tomato passata
  • cup heavy cream
  • ¼ cup pasta water
  • salt and pepper to taste
  • ½ tablespoon Cajun seasoning
  • 2 tablespoons chopped parsley more for garnish
  • parmesan cheese for garnish

Instructions

  • Place the salmon filets on a plate. Cover the filets in olive oil, then add the Cajun seasoning and rub it in.
  • Next, preheat some olive oil in a pan over medium heat. Add the salmon filets and sear them from both sides until cooked through, usually 4-5 minutes per side. Then flake the salmon, toss carefully, and remove from the pan.
  • While the salmon cooks, cook the pasta according to the package instructions. Save some pasta water. Then drain and set aside.
  • Next, add more olive oil to the pan if needed and sauté the garlic and onion until the onion turns translucent. Then add the remaining vegetables and sauté until almost tender.
  • Now add the white wine, tomato passata, heavy cream, pasta water, salt, pepper, Cajun seasoning, and parsley. Stir until combined and bring the sauce to a simmer.
  • Add the pasta and toss until combined. Gently fold in the flaked salmon.
  • Garnish with parmesan cheese, some extra parsley, and enjoy!
