Spicy Chicken Udon Noodle Soup

This spicy chicken udon noodle soup is a super quick and delicious noodle soup recipe that I love to make for lunch. It is super flavorful, has lots of fresh vegetables, and is perfect for anyone who loves Asian foods!

Ingredients

  • 1 garlic clove minced
  • 2 mushrooms sliced
  • 1 boneless skinless chicken thigh cut into bite-sized chunks
  • 1 ¼ cups chicken broth
  • ½ tablespoon fine gochugaru (Korean chili powder) mild or spicy
  • ½ tablespoon gochujang mild
  • ¾ tablespoon soy sauce
  • ¼ teaspoon sugar (optional) more as needed
  • 3 ounces dried udon noodles
  • 1 green onion sliced
  • optional: more vegetables (broccoli, bok choy, cauliflower, baby spinach, etc.)

Instructions

  • Add the minced garlic, mushrooms, white parts of the green onion, and chicken thigh pieces to a pot. Pour the chicken broth into the same pot and bring everything to a boil. Then reduce to a simmer.
  • Once the soup is simmering, add the gochugaru, gochujang, soy sauce, and sugar (optional). Cover the pot and let everything simmer for 8-10 minutes. Then add the remaining green onions.
  • Optional: If you want to use more vegetables, add them according to their cook time to the soup.
  • In the meantime, cook the udon noodles in a separate pot according to package instructions.
  • Transfer the noodles to a large bowl. Then pour the broth and other ingredients over the noodles. Enjoy!
