Crispy Smashed Potatoes

Crispy smashed potatoes are going to be your new favorite way to enjoy potatoes! They are deliciously seasoned, perfectly crisp on the outside, and soft on the inside. Plus, they are super easy to make!

Ingredients

  • 2 pounds baby potatoes
  • 1 ½ tablespoon extra virgin olive oil
  • 1 ½ tablespoon butter melted
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • chopped parsley (optional) for garnish

Instructions

  • Place the potatoes in a pot and fill it with boiling/hot water. Add some salt. Cover the pot and bring the water to a boil. Then reduce to a simmer and let the potatoes cook for around 20 minutes until tender. Then drain and set aside in a colander.

  • Preheat your oven to 400 °F (200 °C).
  • While the potatoes cool a little bit, prepare the marinade. Add the butter to a small bowl and melt it in a microwave. Then add the olive oil and dried herbs. Whisk until combined.

  • Now place the potatoes in a large mixing bowl. Add the oil and herb mixture to the bowl but make sure to save some of it, you'll need it later. Then season with salt and pepper. Toss until evenly coated.

  • Place the potatoes on a baking sheet lined with parchment paper. Make sure there is enough space between the potatoes.
  • Now smash the potatoes with a potato masher, glass, or fork. Drizzle the remaining olive oil and butter mixture over the smashed potatoes.
  • Bake until golden and crispy for about 40 minutes. Garnish with parsley and enjoy!
