First, melt the butter in a pot or saute pan. Then add the onion and sauté until translucent.

Next, add the flour and stir together. Then slowly pour the chicken broth and heavy cream into the pot while continuously whisking. Make sure that there are no lumps.

Now add the bay leaf, dried thyme, celery, and carrots. Season with salt and pepper, then stir. Place the chicken breasts in the pot. Cover and simmer for 20 minutes.

Remove the chicken breasts from the pot. Then stir in the gnocchi and frozen peas. Continue to simmer for a few minutes until the gnocchi is cooked.

In the meantime, shred the chicken breasts. Then add them back to the pot and stir.
Finish with a squeeze of lemon juice and season with more salt and pepper to taste. Garnish, serve, and enjoy!
