Ingredients

  • 1 ounce butter about 2 tablespoons
  • 1 small yellow onion finely diced
  • 1 ounce all-purpose flour about ¼ cup
  • 2 cups chicken broth more if needed
  • ½ cup heavy cream
  • 1 bay leaf
  • ½ teaspoon dried thyme
  • 2 celery stalks finely diced
  • 2 carrots diced
  • salt and pepper to taste
  • 1 pound chicken breast
  • 21 ounces potato gnocchi
  • 1 cup frozen peas
  • lemon juice to taste

Instructions

  • First, melt the butter in a pot or saute pan. Then add the onion and sauté until translucent.

  • Next, add the flour and stir together. Then slowly pour the chicken broth and heavy cream into the pot while continuously whisking. Make sure that there are no lumps.

  • Now add the bay leaf, dried thyme, celery, and carrots. Season with salt and pepper, then stir. Place the chicken breasts in the pot. Cover and simmer for 20 minutes.

  • Remove the chicken breasts from the pot. Then stir in the gnocchi and frozen peas. Continue to simmer for a few minutes until the gnocchi is cooked.

  • In the meantime, shred the chicken breasts. Then add them back to the pot and stir.
