Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened and lightly caramelized, about 5 minutes.

Stir in the garlic and ginger and cook for 1 minute until fragrant.

Stir in the curry paste and cook for 1 minute, stirring constantly, to release the flavor.

Add the pumpkin or squash and stir to coat in the curry paste.

Pour in the broth and add the star anise. Bring to a boil, then reduce the heat, cover, and simmer for 15–20 minutes until the pumpkin is tender.

Remove the star anise. Blend the soup until smooth with an immersion blender, or in batches in a countertop blender.
Stir in the coconut milk and simmer for 2–3 minutes to heat through. Season with salt and pepper as needed.
