First, preheat some olive oil in a pan over medium heat. Add the ground beef and cook until it is browned. Season with salt and pepper. Remove the beef from the pan.

Next, make sure that the pan isn't too hot and add some butter. Let it melt and add the mushrooms to the pan. Sear them from both sides until browned.

Add the aromatics to the pan and sauté until fragrant. Season with salt and pepper.

Now add the beef back to the pan. Add the tomato paste and paprika powder. Toss and sauté for 1-2 minutes.

Add the flour to the pan and toss until combined. Then add the beef broth and dried thyme and stir well. Cover the pan and let everything simmer for 10 minutes.

Now stir in the sour cream and Dijon mustard. Check if you want to add more salt and pepper. Cover the pan and let everything simmer for 10 more minutes.
