Ground Beef Stroganoff

This ground beef stroganoff is a simple variation of classic beef stroganoff that is just as delicious and flavorful! It combines tasty ground beef and mushrooms in a creamy sauce that tastes amazing with egg noodles or pasta.

Ingredients

  • 1 - 2 tablespoons extra virgin olive oil
  • 1 pound ground beef
  • salt and pepper to taste
  • 1 tablespoon butter
  • 10 ounces mushrooms sliced
  • ½ yellow onion finely diced
  • 2 garlic cloves minced
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika powder
  • 2 tablespoons all-purpose flour
  • 2 ½ cups beef broth more if needed
  • ½ teaspoon dried thyme
  • ½ cup sour cream
  • 2 teaspoons Dijon mustard
  • parsley for garnish

Instructions

  • First, preheat some olive oil in a pan over medium heat. Add the ground beef and cook until it is browned. Season with salt and pepper. Remove the beef from the pan.

  • Next, make sure that the pan isn't too hot and add some butter. Let it melt and add the mushrooms to the pan. Sear them from both sides until browned.

  • Add the aromatics to the pan and sauté until fragrant. Season with salt and pepper.

  • Now add the beef back to the pan. Add the tomato paste and paprika powder. Toss and sauté for 1-2 minutes.

  • Add the flour to the pan and toss until combined. Then add the beef broth and dried thyme and stir well. Cover the pan and let everything simmer for 10 minutes.

  • Now stir in the sour cream and Dijon mustard. Check if you want to add more salt and pepper. Cover the pan and let everything simmer for 10 more minutes.

  • Serve with egg noodles or pasta of your choice, garnish with parsley, and enjoy!
