Prepare the homemade enchilada sauce and set it aside. Alternatively, use store-bought enchilada sauce.
2 cups enchilada sauce
Preheat the oven to 350 °F (180 °C).
Next, preheat some olive oil in a pan over medium heat. Then add the onion and garlic and sauté until fragrant. Add the ground turkey and cook until it has browned.

Add ¼ cup of the enchilada sauce, chili powder, salt, and pepper. Continue to sauté for 1 minute.

Now add the refried beans and continue to sauté for 1-2 minutes.

Soften the tortillas in the microwave. Spread some enchilada sauce over both sides of the tortilla, fill it with the meat, and roll it up. Place the tortilla seam-side down in the baking dish. Then repeat until you have used all the tortillas.
8 small flour or corn tortillas
Pour the remaining enchilada sauce over the filled tortillas. Add the shredded cheese on top and bake until the cheese has melted and the sauce is bubbly.
1 cup shredded cheddar and mozzarella cheese
Serve the enchiladas with your favorite toppings and enjoy!
