Ingredients

Salad Ingredients

  • 1 15 ounce-can chickpeas drained and rinsed
  • ½ cucumber diced
  • ½ red or yellow bell pepper diced
  • 1 cup cherry tomatoes halved
  • ½ red onion diced
  • ½ cup feta cheese crumbled
  • ½ cup parsley chopped

Dressing Ingredients

  • 1 small garlic clove minced, optional
  • ½ teaspoon red pepper flakes more to taste
  • 2 tablespoon fresh lemon juice more to taste
  • 1 ½ tablespoon extra virgin olive oil
  • salt and pepper to taste

Instructions

  • Add all salad ingredients to a large bowl.
  • Mix all dressing ingredients in a small bowl or jar.
  • Pour the dressing over the salad, stir everything and check if you want to add more salt, pepper, red pepper flakes or lemon juice. Enjoy!

  • Portion sizes: You can serve this salad as main dish or side dish. Two servings of the recipe you find above should make one serving as main dish.
