Greek Orzo Salad
- 1 cup orzo
- 1 cup diced cucumber
- 1 red bell pepper diced
- 1 cup halved cherry tomatoes
- 1 small red onion finely diced
- ¼ cup parsley chopped
- ½ cup sliced Kalamata olives
- ¾ cup diced feta cheese
Greek Salad Dressing
- 1 garlic clove minced
- 2 tablespoons red wine vinegar
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- ½ teaspoon Dijon mustard
- ½ teaspoon dried oregano
First, cook the orzo according to package instructions. Then drain, rinse, and set aside.
While the orzo cooks, chop all salad ingredients and add them to a large bowl.
In a small bowl, mix the dressing ingredients.
