Salmon Marinade
- 4 salmon filets
- 2 tablespoons Cajun seasoning
- 1 ½ tablespoons extra virgin olive oil
Other Ingredients
- 1 tablespoon extra virgin olive oil
- 12 ounces pasta of choice
- 3 garlic cloves minced
- 1 yellow onion finely diced
- 1 red bell pepper sliced
- 6 mushrooms sliced
- 1 small zucchini halved and sliced
- ⅓ cup white wine
- 1 ¼ cup tomato passata
- ⅓ cup heavy cream
- ¼ cup pasta water
- salt and pepper to taste
- ½ tablespoon Cajun seasoning
- 2 tablespoons chopped parsley more for garnish
- parmesan cheese for garnish
Place the salmon filets on a plate. Cover the filets in olive oil, then add the Cajun seasoning and rub it in.
Next, preheat some olive oil in a pan over medium heat. Add the salmon filets and sear them from both sides until cooked through, usually 4-5 minutes per side. Then flake the salmon, toss carefully, and remove from the pan.
While the salmon cooks, cook the pasta according to the package instructions. Save some pasta water. Then drain and set aside.
Next, add more olive oil to the pan if needed and sauté the garlic and onion until the onion turns translucent. Then add the remaining vegetables and sauté until almost tender.
Now add the white wine, tomato passata, heavy cream, pasta water, salt, pepper, Cajun seasoning, and parsley. Stir until combined and bring the sauce to a simmer.
Add the pasta and toss until combined. Gently fold in the flaked salmon.
Garnish with parmesan cheese, some extra parsley, and enjoy!
