White Asparagus with Hollandaise Sauce

White asparagus with hollandaise sauce is a classic German dish that is enjoyed by everyone while asparagus is in season! The combination of asparagus and hollandaise sauce is pure perfection and is a total must-make if you can find white asparagus in your local grocery store or farmer’s market.

Ingredients

Asparagus

  • 2 pounds white asparagus ends trimmed, peeled
  • 2 teaspoons salt
  • 2 teaspoons butter
  • 1 teaspoon white sugar
  • 2 lemon slices
  • parsley chopped, for garnish
  • lemon wedges for serving

Hollandaise Sauce

  • 3 egg yolks
  • ¾ tablespoon lemon juice
  • ½ teaspoon Dijon mustard
  • 1 teaspoon white sugar
  • ¼ teaspoon salt
  • pinch of ground nutmeg or cayenne pepper (optional)
  • 6 ounces butter

Instructions

  • Rinse the white asparagus. Then peel the asparagus and trim off the tough ends.
  • Add some water to a large pot or pan and bring it to a boil. There should be enough water to cover the asparagus fully. Then add the salt, butter, and white sugar. Stir until the ingredients dissolve.
  • Next, add the asparagus and lemon slices. Cover the pot and reduce to a simmer. Let the asparagus cook for 8-12 minutes until it is tender. Then remove the asparagus from the pot.
  • While the asparagus cooks, you can prepare the hollandaise sauce. First, place the egg yolks, lemon juice, Dijon mustard, sugar, salt, and ground nutmeg in a tall and narrow container. Then blend with an immersion blender until combined.
  • Next, add the butter to a microwave-safe bowl. Melt the butter in the microwave until it is hot. Then slowly pour the butter into the container while continuously blending with your immersion blender. Add some warm water and blend if you want to thin the sauce.
  • Place the white asparagus on a plate and pour some hollandaise sauce over the asparagus. Garnish with chopped parsley and serve some potatoes and lemon wedges on the side. Enjoy!
