Spam and Eggs

- ½ 12-ounce can spam cubed
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar or honey
- 4 eggs
- 2 cups cooked white rice short-grain or medium-grain
- furikake, green onion as toppings
First, cook the cubed spam in a non-stick pan over medium to medium-high heat until browned. Lower the heat and wait until the pan has cooled down a bit. Then add the soy sauce and sugar. Stir and cook until caramelized. Remove from the pan.

Next, over medium heat prepare either fried eggs or scrambled eggs in the same pan. I recommend fried eggs as the runny yolk tastes perfect with the spam and white rice.
