White Bean Pumpkin Turkey Chili

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 yellow onion finely diced
  • 3 garlic cloves minced
  • 1 pound ground turkey
  • salt and pepper to taste
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder American spice blend, not ground chiles
  • ½ tabelespoon paprika powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • 1 cup chicken broth use more if needed
  • 1 15-ounce can diced tomatoes
  • 1 15-ounce can pumpkin puree
  • 2 15-ounce cans white beans drained and rinsed, use two different types
  • 1 green bell pepper cut into cubes
  • toppings of your choice (optional) like sour cream, shredded cheese, avocado, jalapeño slices, chopped cilantro

Instructions

  • Preheat some olive oil in a pot over medium heat. Add the garlic and onion and sauté until the onion turns translucent.

  • Next, add the ground turkey and sauté until it is fully browned. Season with salt and pepper.

  • Add the tomato paste and all the spices. Sauté briefly until fragrant.
    2 tablespoons tomato paste, 2 tablespoons chili powder, ½ tabelespoon paprika powder, ½ teaspoon ground cumin, ¼ teaspoon cayenne pepper
  • Next, add all of the liquids and remaining ingredients. Stir until combined. Then cover the pot, bring the chili to a boil, reduce to a simmer, and let the chili cook for 20 minutes. Adjust the seasoning as needed.
