Korean dakgalbi is one of the most delicious dishes ever! It is slightly sweet, spicy, and rich in umami.

First, whisk together gochujang (Korean chili paste), gochugaru (Korean chili flakes), garlic, soy sauce, brown sugar, and mirin in a small bowl.

Next, soak some rice cakes in water. After 10-15 minutes drain and set aside.

Now add chicken thigh pieces, carrot, potatoes, green onions, yellow onion, and green cabbage to a large bowl. Add the sauce, sesame seeds, sesame oil, and black pepper. Mix until combined.

Cook the dakgalbi in a large pan over medium heat. Cover the pan and add water as needed.

When the vegetables start to soften, add the rice cakes. Let the dakgalbi simmer until the vegetables are tender.
