This lentil potato soup is incredibly flavorful and delicious!

First, sauté some onion, garlic, carrots, and celery in a pot over medium heat.

Next, add tomato paste, curry powder, paprika powder, and ground cumin. Season with salt and pepper. Then sauté for 1 minute.

Now add the potatoes, lentils, vegetable broth, and bay leaf. Cover the pot and let the soup simmer for 25-30 minutes.

Next, blend the soup partially with an immersion blender. Be sure to leave enough vegetable chunks.

Stir in the baby spinach and add some lemon juice to taste.
