This vegetable lentil soup is incredibly flavorful and delicious!

First, sauté some onion, garlic, celery, and carrots in a pot for 2-3 minutes.

Next, add the tomato paste and spices. Sauté for 1-2 minutes.

Now add the diced tomatoes, lentils, vegetable broth, salt, and pepper. Cover and let everything simmer for 30 minutes.

Use an immersion blender to partially blend the soup. Stir in the baby spinach and lemon juice.
