In a mixing bowl, whisk together the brown sugar, white sugar, biscoff butter, and melted butter.

Then add in the egg, egg yolk, and vanilla extract. Whisk again until combined.

In another bowl, whisk together the flour, baking soda, and salt. Then add the dry ingredients to the wet ingredients and stir until combined.
2 cups all-purpose flour, ¾ teaspoon baking soda, ¾ teaspoon salt
Now gently fold in the cookie crumbs and white chocolate chips.
1 ¼ cup white chocolate chips, 1 cup biscoff cookies
Place the covered cookie dough bowl in the refrigerator and let it rest for 15 minutes.
Preheat the oven to 350 °F (180 °C). Roll the dough into balls and place them on a baking sheet lined with parchment paper. Add more chocolate chips or cookie pieces if desired. Then flatten the dough balls slightly.
Bake the cookies for around 11 minutes until the edges start to turn golden brown. Let the cookies rest for a few minutes and enjoy!
