Beef Pumpkin Chili

This hearty beef pumpkin chili is made with ground beef, two kinds of beans, and a full can of pumpkin puree that thickens the pot into something rich and velvety. It's warmly spiced without being harsh, comes together in one pot in 30 minutes, and tastes even better the next day.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 yellow onion finely diced
  • 3 garlic cloves minced
  • 1 pound ground beef
  • salt and pepper to taste
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder American spice blend, not ground chiles
  • ½ tablespoon paprika powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • 1 cup beef broth
  • 1 can diced tomatoes with juices
  • 1 can pumpkin puree
  • 2 cans beans of your choice I used white beans and black beans, drained and rinsed
  • 1 green bell pepper cut into cubes
  • toppings of your choice (optional) like sour cream, shredded cheese, avocado, jalapeño slices, chopped cilantro

Instructions

  • Preheat some olive oil in a pot over medium heat. Add the garlic and onion and sauté until the onion turns translucent.

  • Next, add the ground beef and sauté until it is fully browned. Season with salt and pepper.

  • Add the tomato paste and all the spices. Sauté briefly until fragrant.

  • Next, add all of the liquids and remaining ingredients. Stir until combined. Then cover the pot, bring the chili to a boil, reduce to a simmer, and let the chili cook for 15-20 minutes. Adjust the seasoning as needed.
