Ingredients

Salad Ingredients

  • 1 lb chicken breast
  • 8 oz pasta of choice
  • 1 cup cherry tomatoes halved
  • 1 ½ cup cucumber cut into small slices
  • ½ red onion
  • 4 oz Kalamata olives halved
  • ¾ cup feta cheese diced
  • ¼ cup parsley chopped
  • 2 teaspoon olive oil extra virgin, for searing the chicken breast
  • salt and pepper to taste

Greek Dressing Ingredients

  • 1 ½ tablespoon lemon juice fresh
  • 1 ½ tablespoon olive oil extra virgin
  • 1 tablespoon red wine vinegar

Instructions

  • Cook the pasta and drain the water when the pasta is cooked. Then, set aside to let the pasta cool.
  • While the pasta is cooking, prepare the vegetables, parsley and feta. Make the dressing and set aside.
  • Preheat a pan with olive oil over medium heat. Cut the chicken breast into chunks and sear from both sides until golden.
  • Add the salad ingredients and the dressing to a bowl. Add salt and pepper. Then, mix everything. Enjoy!
