    This watermelon feta salad is an amazing light and easy summer dish! One thing I just can’t get over is how this recipe only needs a few ingredients to create a healthy and delicious salad recipe that enhances the flavor of one of my favorite summer fruits: watermelon. The watermelon salad perfectly combines sweet and salty flavors and is perfect for picnics, as dessert, as a snack or as a sweet topping for your favorite salad!

    Soo, let me introduce you to the four ingredients that make this watermelon salad SO YUMMY and addictive:

    • watermelon
    • feta
    • basil
    • balsamic glaze

    Yep, this really is all you need. And trust me, this watermelon salad is sooo refreshing and tasty! Definitely my favorite way to switch up the way I serve watermelon.

    How to make the watermelon feta salad

    Preparation for this delicious watermelon feta salad is so easy and simple. It’s what I love about this recipe. All you have to do is cut the watermelon and feta into cubes. Then you chop the basil. Mix everything in a bowl and drizzle the balsamic glaze on top before serving. That’s it! It really is very simple, but the result is a super healthy and flavorful watermelon salad.

    Should you prepare the balsamic glaze yourself?

    The answer to this questions is definitely yes (well, at least most of the time)! The problem with store-bought balsamic glaze is that most of the time it is full of unhealthy ingredients. Just check the ingredient list the next time your are in a supermarket and you will notice that there are lots of other ingredients besides balsamic vinegar.

    Luckily, making a balsamic reduction is super easy! All you need is balsamic vinegar and a sweetener of choice, such as maple syrup. Here is how you make it: simply add the balsamic vinegar and maple syrup to a pot. Heat the pot using high heat to bring the balsamic reduction to a boil. When it boils, reduce the heat a little and let it simmer for approximately ten minutes. The balsamic vinegar should be reduced by half and have a thicker consistency when the ten minutes are over. If you are happy with the result, let the balsamic glaze cool down and store it in the refrigerator. If it is still too liquid, simply increase the heat and let the balsamic reduction boil some more.

    It really is super easy to make! Since it is an extra step for this recipe, I simply make a large batch of balsamic glaze and store it in the refrigerator. This way, you always have balsamic glaze to make this super tasty watermelon salad! Plus, you can use the balsamic glaze for all of your other salads to create wonderful dressings! Great, right?

    More tips for you

    Here are a few more tips for making this incredibly delicious and easy watermelon feta salad:

    • Combine the ingredients shortly before serving. If you combine the feta and the watermelon in advance, the watermelon feta salad will get super soggy and watery. If you want to prepare this salad for a picnic, simply use a separate container for the watermelon and mix the ingredients before eating.
    • Add other veggies. You definitely can be creative and use other vegetables such as cucumber or red onion. As eating watermelon in summer is a MUST, you definitely can use this tip to switch things up so you don’t get bored.
    • Serve with bread. I actually love to eat watermelon and feta with bread! When my mom first served me watermelon with feta and bread I actually thought that it was super weird. But I was soooo wrong. It tastes AMAZING. Definitely try it!

    Ingredients

    Watermelon Feta Salad

    • 1.6 lb watermelon cut into cubes
    • ¾ cup feta cut into small cubes
    • ⅓ cup basil chopped
    • balsamic glaze

    Balsamic Glaze (optional)

    • ¼ cup balsamic vinegar
    • 2 teaspoon maple syrup
    US Customary - Metric

    Instructions

    Watermelon Feta Salad

    • Cut the watermelon into cubes. Cut the feta into small cubes. Chop the basil.
    • Add the ingredients to a bowl and mix. Serve on a plate and drizzle the balsamic glaze on top. Enjoy!

    Balsamic Glaze (optional)

    • If you want to prepare your own balsamic glaze, simply add the balsamic vinegar and maple syrup to a pot.
    • Heat the pot using high heat and bring the balsamic reduction to a boil. Then reduce the heat a bit and let the balsamic reduction simmer for approx. 10 minutes until it is reduced by half.
    • Let the balsamic glaze cool down and use it for the salad. Any excess can be stored in the refrigerator.

    Notes

    • I recommend making the balsamic glaze yourself, as most store-bought versions contain unnecessary and unhealthy ingredients. You can also prep it in advance and keep it in the refrigerator for your salad dressings!
    • Combine the watermelon and feta shortly before serving. Otherwise, the salad can become very watery.
