This air fryer chicken breast is juicy, perfectly seasoned, and ready in about 25 minutes - no marinating, no brining, no fuss. A simple spice rub with paprika, garlic powder, cayenne, curry powder, and nutmeg gives the chicken a warm, golden crust while the air fryer locks in all the moisture. Serve it sliced over rice, alongside a fresh salad, or as part of your weekly meal prep.

The air fryer is one of those tools that changed how I cook chicken breast entirely. Before I started using it, chicken breast was always a gamble - sometimes juicy, sometimes dry and sad. But the air fryer just nails it, every single time. The hot circulating air crisps the outside while keeping the inside tender and moist, and the whole thing is done faster than preheating an oven.

I use this recipe constantly, whether it's for a quick weeknight dinner or to prep protein for the week ahead. If you love easy, healthy chicken dinners, you'll also want to check out my air fryer chicken fajitas and chicken stroganoff - both are weeknight staples for me.

    Air Fryer Chicken Breast Ingredients

Here's everything you need to make this air fryer chicken breast recipe:

    • Chicken breast: One pound of boneless, skinless chicken breast - that's about two large or three smaller breasts. The most important thing here is that they're roughly the same size so they cook evenly. If one breast is noticeably thicker than the other, you can pound the thick end down a bit with a rolling pin or the bottom of a heavy pan to even it out. This makes a real difference in preventing one piece from drying out while the other is still undercooked.
    • Seasoning: This is what takes the chicken from plain to packed with flavor. The blend uses paprika powder for warmth and color, garlic powder for savory depth, cayenne pepper for a subtle kick of heat, curry powder for earthiness, and ground nutmeg for a slightly sweet, aromatic note that ties everything together. It's an unexpected combination, but it works - the spices complement each other without any single one dominating. Make sure you use all of them for the best result.
    • Olive oil: A tablespoon of extra virgin olive oil helps the seasoning stick to the chicken and encourages browning in the air fryer. Avocado oil or any neutral oil works as a substitute if you don't have olive oil on hand.

How to Make Air Fryer Chicken Breast

Preheat the air fryer. Set your air fryer to 375°F (190°C) and let it preheat. This step matters more than you might think - starting with a hot air fryer means the chicken begins cooking immediately and evenly, which directly affects how juicy the final result is. Skipping the preheat can throw off the cook time and lead to uneven browning.

Season the chicken. While the air fryer heats up, place the chicken breasts in a bowl. Drizzle with the olive oil, then add the paprika, garlic powder, cayenne, salt, pepper, curry powder, and nutmeg. Toss everything together until the chicken is evenly coated on all sides - you want every surface covered so the spice rub forms a flavorful crust as it cooks.

Air fry. Place the chicken breasts in the air fryer basket in a single layer, making sure they're not overlapping or touching. Air fry for about 20 minutes, or until the internal temperature reaches between 160°F and 165°F. I always recommend using an instant-read meat thermometer here, since cook times can vary depending on the size of your chicken and your specific air fryer model.

Rest and serve. Once the chicken is done, remove it from the air fryer and let it rest for about 5 minutes before slicing. This step is non-negotiable - resting allows the juices to redistribute throughout the meat, so when you cut into it, the juices stay in the chicken instead of running all over the cutting board. Then slice and serve with your favorite sides.

    Tips & Notes

    • Use a meat thermometer. This is the single most reliable way to get perfectly cooked chicken every time. You want the internal temperature to be around 160-165°F when you pull it from the air fryer, since it will continue to cook slightly while resting. I use a Cosori air fryer and 20 minutes is always the sweet spot for me, but your timing may differ.
    • Don't overcrowd the basket. Air fryers work by circulating hot air around the food, so if the chicken breasts are stacked or overlapping, the air can't reach all surfaces evenly. As a result, you'll end up with unevenly cooked chicken - crispy in some spots, pale and undercooked in others. If you need to cook more than your basket can hold, do it in batches.
    • Pound thick breasts to an even thickness. If your chicken breasts are very thick on one end and thin on the other, the thin end will overcook before the thick part is done. A few gentle pounds with a rolling pin or meat mallet solves this problem and ensures every bite is equally juicy.
    • Let the chicken come to room temperature. Taking the chicken out of the fridge about 15 minutes before cooking helps it cook more evenly. Cold chicken straight from the fridge can result in a dry exterior and an undercooked center.
    • Pat the chicken dry before seasoning. Moisture on the surface of the chicken prevents the spice rub from sticking properly and can lead to steaming instead of crisping. A quick pat with paper towels before adding the oil and seasonings makes a noticeable difference in the final texture.

How to Serve Air Fryer Chicken Breast

    • With rice and a side salad - my go-to for a quick, balanced dinner. The seasoned chicken pairs well with plain jasmine or basmati rice, and a simple side salad with cucumber, tomatoes, and a light vinaigrette rounds everything out.
    • With roasted potatoes - you can make crispy smashed potatoes in the oven while the chicken is in the air fryer, or roast potato wedges in the air fryer after the chicken is done.
    • With a dip - tzatziki is my favorite here. You can use store-bought or make a quick homemade version - my Greek-style chicken bowls have a simple recipe for it that works perfectly alongside this chicken.

    Variations

    • Herb-seasoned: Swap out some of the paprika for dried rosemary, dried thyme, or Italian seasoning. Herbes de Provence is another great option if you have it - it gives the chicken a French-inspired flavor that pairs beautifully with roasted vegetables.
    • Spicy version: Increase the cayenne pepper or add a pinch of chili flakes for more heat. You can also use a Cajun seasoning blend in place of the spice mix in this recipe for a bold, smoky flavor.
    • Mexican-style: Add ground cumin, ground coriander, and a little extra chili powder to the seasoning mix. Then serve the chicken sliced over rice with my black bean and corn salad for a quick bowl-style dinner.
    • Lighter option: Skip the olive oil entirely and use a light spray of cooking oil instead. The chicken won't brown quite as deeply, but it still turns out tender and flavorful.

    How to Store and Reheat

Store leftover air fryer chicken breast in an airtight container in the refrigerator for up to 3-4 days. For reheating, the air fryer is your best option - reheat at 350°F for 3-5 minutes until warmed through. You can also reheat in a skillet over medium heat with a splash of water or broth to keep it moist. The microwave works in a pinch, but the texture won't be quite as good. Cooked chicken can also be frozen for up to 3 months - wrap it tightly in plastic wrap or store in a freezer-safe container, then thaw in the fridge overnight before reheating.

    Frequently Asked Questions

What temperature do you cook chicken breast in the air fryer?

I recommend 375°F (190°C) for the best results. At this temperature, the outside gets a nice golden color and light crispness while the inside stays juicy and tender.

How long do you air fry chicken breast?

About 20 minutes for medium-sized boneless, skinless chicken breasts (roughly 1 pound total). However, cook time can vary depending on the thickness of the chicken and your specific air fryer model. Always use a meat thermometer - you're looking for an internal temperature of 160-165°F.

Do you need to flip chicken breast in the air fryer?

For this recipe, flipping isn't necessary. The air fryer circulates hot air around the chicken from all sides, so it cooks evenly without needing to be turned. That said, if you notice one side browning faster, a quick flip halfway through won't hurt.

Can I use frozen chicken breast in the air fryer?

I'd recommend thawing the chicken first for the best texture and most even cooking. Frozen chicken breast can be cooked in the air fryer, but the seasoning won't stick as well and the cooking time will need to be extended significantly.

Can I use chicken thighs instead?

Yes - boneless, skinless chicken thighs work great with this same seasoning and method. They tend to stay a bit juicier than breast and are more forgiving with cook time. The timing is roughly the same, but always check with a thermometer.
